Celery Soup (serves 4)
1 head of celery
1 chicken stock cube
Salt, pepper, pinch of mixed herbs
1. Wash and dice the celery, slice the onion
2. Put all the ingredients, except the flour and milk, in a pan, bring to the boil then reduce the heat, cover and simmer for 40 mins.
3. Liquidise and sieve
4. Blend the flour with a little of the milk, gently reheat the soup with the rest of the milk, add the blended flour stirring constantly.
5. Heat gently for 5 mins to cook the flour, check the seasoning, and serve
