Low Calorie Greek-Style Fava Beans

2 Tbs. oil
1 clove garlic, thinly sliced
1 onioncooked, finely chopped
1 lb. canned fava beans, drained
8 tomatoescooked, skinned, seeded and chopped
2 Tbs. dry white wine
1 Tbs. fresh parsley, chopped
1 bay leaf
salt and pepper


Heat the oil in a pan, add the garlic and onion and fry for 4-5 minutes, without browning.

Stir in the fava beans and toss well to coat in the oil.

Add the remaining ingredients, with salt and pepper to taste.

Cook on low heat for 5 minutes. Remove the bay leaf and let cool before serving.
