Prawn and Green Mango Curry (Serves: 4-6)
2 tbsps Oil
1/3 cup Cream
7-8 Curry leaves
500 ml boiling Water
40 gms Coconut Milk powder
1½ kg uncooked king Prawns
200 gms Onion, finely chopped
800 gms green Mangoes, peeled sliced
1 tsp Salt
½ tsp Turmeric
2 pods Garlic, chopped
2-tsp Coriander powder
3 long dried red Chillies, chopped
45 gms desiccated Coconut, toasted
Spice mixture: grind or process all ingredients until crushed.
Shell and de-vein prawns, leaving tails intact.
Heat oil in large pan; cook onion, stirring until browned lightly.
Add spice mixture; cook stirring until fragrant.
Add prawns, mangoes, leaves and blended coconut milk powder and boiling water; simmer; uncovered, about 5 minutes until prawns are tender.
Remove from heat, stir in cream.
