Gingered Chicken with Mango (serves 4)
╝ cup Oil
╝ tsp Nutmeg
1 tsp Soya sauce
2 tsps Ground Ginger
╝ tsp Ground Cloves
2 pods of Garlic, crushed
╝ cup Dark Brown sugar
Salt and ground pepper to taste
1 cup Mangoes, peeled and diced
1 kg Chicken breast fillets, skinned
Heat the oil in a heavy frying pan.

Add the garlic and sautÚ for a few minutes. Then, add the chicken fillets. Cook for about 15-20 minutes until the chicken is cooked through.

Meanwhile, in a medium-sized bowl, combine the peeled and diced mango with the sugar, cloves, ginger, and nutmeg.

Pour the mixture over the cooked fillets and gently mix to cover the chicken pieces.

Add soya sauce, salt, and pepper to taste. Cook for about 10 more minutes.

Serve hot with a fresh green vegetable and a side dish of rice.
